Potato Salad with Garlic Mayo

List of Ingredients

New potatoes 500g
1 Red onion
100g gherkin
Sprig of fresh Parsley and Basil
Salt and pepper to taste
1/2 to 1 jar vegan garlic mayo

Method

Boil potatoes until soft to a knife.

 

Then cool before adding other ingredients.

 

Finely dice the red onion and gherkin.

 

Roughly chop the herbs and mix all together with Garlic mayo.

 

Season to taste. Serve chilled.
